- This is a traditional after-Thanksgiving soup, and a wonderful use of turkey
- leftovers. It is a hearty winter soup, suitable as a main course,
- especially when served with fresh bread or biscuits.

- .IG "6 cups" "clear chicken broth" "1.5 l"
- .IG "\(14 cup" "uncooked white rice" "50 g"
- .IG "\(14 cup" "uncooked wild rice" "35 g"
- .IG "\(12 cup" "green onions," "25 g"
- chopped fine
- .IG "\(12 cup" "butter" "120 g"
- .IG "\(34 cup" "flour" "75 g"
- .IG "\(12 tsp" "salt" "2.5 ml"
- .IG "\(14 tsp" "pepper" "1 ml"
- .IG "2 cups" "milk" "5 dl"
- (or a mixture of milk and cream)

- cubed (or use chicken)

- cooked crisp and crumbled

- In a large sauce pan combine chicken broth, rice and onions. Bring
- to a boil, reduce heat and simmer 40 minutes.

- In a medium sauce pan or skillet melt butter. Stir in the flour, salt,
- and pepper, cook 1 minute stirring until smooth and bubbly.

- Slowly stir in the milk and cook until slightly thickened.

- Slowly stir the milk mixture into the rice mixture, add remaining
- ingredients and heat gently, do not boil.
